What is a tagine?

Tagine refers to a special type of cooking pot used in North Africa which works to trap steam and keep meats and other ingredients moist during the cooking process. The word ‘tagine’ also commonly refers to stew-like dishes that are traditionally prepared within a tagine pot. Don’t worry if you don’t have this specific type of pot though- you can still make a delicious tagine with a Dutch oven, crockpot or slow cooker.
