Ingredients for Pizza Scrolls
- 1 cup self-raising flour
- ½ cup wholemeal self-raising flour
- 1 cup thick full-fat Greek yoghurt
- ¼ cup pizza sauce
- 2–3 mushrooms, finely chopped
- ¼ red capsicum, finely diced
- 1 ½ cups shredded cheese
Method for Pizza Scrolls

- Preheat the oven to 190°C (fan-forced) and lightly grease a square baking tray with spray oil or line with baking paper.
- In a bowl, combine the self-raising flour, wholemeal flour, and yoghurt. Mix until a dough forms, then turn onto a well-floured surface and knead gently until smooth.
- Roll the dough into a rectangle (approx. 25 × 30 cm). Spread evenly with pizza sauce, then sprinkle with mushrooms, capsicum, and cheese.
- Starting from one long edge, roll the dough up tightly into a log. Slice into 9 even pieces and arrange cut side up on the prepared tray.
- Bake for 15-20 minutes, or until golden brown and cooked through.
- Allow to cool slightly before serving.
