By Marika Day. Soft, cheesy, and packed with flavour, these homemade pizza scrolls are a fun snack or lunchbox filler. Made with a simple yoghurt dough and classic pizza toppings, they’re quick to prepare and perfect for kids and adults alike.

Ingredients for Pizza Scrolls

  • 1 cup self-raising flour
  • ½ cup wholemeal self-raising flour
  • 1 cup thick full-fat Greek yoghurt
  • ¼ cup pizza sauce
  • 2–3 mushrooms, finely chopped
  • ¼ red capsicum, finely diced
  • 1 ½ cups shredded cheese

Method for Pizza Scrolls

    1. Preheat the oven to 190°C (fan-forced) and lightly grease a square baking tray with spray oil or line with baking paper.
    2. In a bowl, combine the self-raising flour, wholemeal flour, and yoghurt. Mix until a dough forms, then turn onto a well-floured surface and knead gently until smooth.
    3. Roll the dough into a rectangle (approx. 25 × 30 cm). Spread evenly with pizza sauce, then sprinkle with mushrooms, capsicum, and cheese.
    4. Starting from one long edge, roll the dough up tightly into a log. Slice into 9 even pieces and arrange cut side up on the prepared tray.
    5. Bake for 15-20 minutes, or until golden brown and cooked through.
    6. Allow to cool slightly before serving.
