The sweet potato adds natural moisture, making them tender for early self-feeding. Serve in halves or strips based on your baby’s age, and always supervise during meals.

Ingredients for Beef Mince and Sweet Potato Rissoles

1 small sweet potato

500g regular beef mince

½ cup breadcrumbs

1 egg

2 tbsp tomato paste or sauce

½ onion, grated

½ tsp garlic powder

1 tsp mixed Italian herbs

1 tbsp ground flaxseed

Oil for cooking

Method for Beef Mince and Sweet Potato Rissoles

    1. Place the whole sweet potato in a microwave-safe dish with a little water. Pierce it a few times with a fork, then microwave on high for 6-8 minutes, or until soft. Allow to cool, then peel and mash.
    2. In a large bowl, combine the mashed sweet potato, beef mince, breadcrumbs, tomato paste, egg, grated onion, garlic powder, herbs and flaxseed. Mix well.
    3. Divide the mixture into 9 equal portions and shape into rissoles.
    4. Heat a drizzle of olive oil in a large non-stick pan over medium heat.
    5. Cook rissoles in batches for 4-5 minutes each side, or until golden brown and cooked through.
