Ingredients for Beef Mince and Sweet Potato Rissoles
1 small sweet potato
500g regular beef mince
½ cup breadcrumbs
1 egg
2 tbsp tomato paste or sauce
½ onion, grated
½ tsp garlic powder
1 tsp mixed Italian herbs
1 tbsp ground flaxseed
Oil for cooking
Method for Beef Mince and Sweet Potato Rissoles

- Place the whole sweet potato in a microwave-safe dish with a little water. Pierce it a few times with a fork, then microwave on high for 6-8 minutes, or until soft. Allow to cool, then peel and mash.
- In a large bowl, combine the mashed sweet potato, beef mince, breadcrumbs, tomato paste, egg, grated onion, garlic powder, herbs and flaxseed. Mix well.
- Divide the mixture into 9 equal portions and shape into rissoles.
- Heat a drizzle of olive oil in a large non-stick pan over medium heat.
- Cook rissoles in batches for 4-5 minutes each side, or until golden brown and cooked through.

Can I bake beef and sweet potato rissoles instead of pan-frying?
Yes these rissoles work well baked. Heat the oven to 200°C and line a baking tray with baking paper. Spray the rissoles with oil before cooking for 20-25 mins or until cooked through.
How do I serve rissoles to younger babies safely?
Because of the sweet potato in these they are quite soft and easy for babies even without teeth to break down. You can serve the rissole whole, or cut in half or strips to make it easier to grasp with one hand.
