Ingredients for Green Pear Pikelets
1 pear, cored and chopped (leave skin on)
¾ cup rolled oats
¼ cup natural Greek yoghurt
½ cup baby spinach leaves
½ tsp ground cinnamon
2 eggs
1 tsp baking powder

Method for Green Pear Pikelets

- Add the pear, oats, spinach, yoghurt, cinnamon, eggs, and baking powder to a blender. Blend until smooth and well combined. Allow the mixture to sit for 5 minutes before cooking.
- Heat the oil in a non-stick frying pan over medium heat.
- Spoon approximately 1 tablespoon of batter per pikelet into the pan. Cook for 3 minutes on each side, or until golden and cooked through.
- Allow to cool slightly before serving.

Can I make the pear pikelets batter ahead of time?
You can make the batter 30-60 mins ahead of cooking but any longer the batter will become too thick and may need additional liquid. If you are making the batter ahead, store it in the fridge in an airtight container.
Can I substitute the pear with an apple or a banana in this pikelets recipe?
I have tested this recipe with both apple and banana and they both work well. The banana results in a slightly thinner batter and thinner pikelet.
