Few things are more comforting than a homemade bowl of chicken soup! This Chicken and Rice Soup derives from many cuisines, including Singaporean, Malaysian, Vietnamese, and Thai, but one thing’s for sure, it’s a family favourite! A great way to use chicken leftovers, this Chicken and Rice Soup is paired with sweet potato, onion, turmeric, ginger, garlic and stock to fill your family’s bowl with an abundance of flavours. This easy chicken and rice recipe is perfect for little mouths, and a great way to meal prep for the whole family. 

Ingredients

1 tbsp olive oil

500g chicken breast, chopped finely

1 medium sweet potato, peeled and diced finely

1 small onion, diced finely

2 tsp ground turmeric

1 tsp ginger paste

3 tsp garlic paste

1L salt reduced chicken or vegetable stock

1 cup long-grain rice

1 can unsweetened coconut milk

Step by step

  • Chicken and Rice Soup Recipe

    1. Heat a large saucepan over medium heat and add olive oil and chicken, cook for 5 minutes.
    2. Add sweet potatoes and onion to pan. Stir and cook until the onions are softened and begin to brown.
    3. Add the ground turmeric, ginger and garlic to the pan. Stir until fragrant.
    4. Pour in chicken stock and rice. Bring to a boil, then reduce the heat to simmer. Cover and cook for 15 minutes.
    5. Stir in coconut milk, cook for further 5 minutes or until sweet potato and rice are tender. Serve.
