Ingredients
1 tbsp olive oil
500g chicken breast, chopped finely
1 medium sweet potato, peeled and diced finely
1 small onion, diced finely
2 tsp ground turmeric
1 tsp ginger paste
3 tsp garlic paste
1L salt reduced chicken or vegetable stock
1 cup long-grain rice
1 can unsweetened coconut milk

Chicken and Rice Soup Recipe
- Heat a large saucepan over medium heat and add olive oil and chicken, cook for 5 minutes.
- Add sweet potatoes and onion to pan. Stir and cook until the onions are softened and begin to brown.
- Add the ground turmeric, ginger and garlic to the pan. Stir until fragrant.
- Pour in chicken stock and rice. Bring to a boil, then reduce the heat to simmer. Cover and cook for 15 minutes.
- Stir in coconut milk, cook for further 5 minutes or until sweet potato and rice are tender. Serve.
