Ingredients
1 medium carrot (120g)
1 medium zucchini (120g)
1 Granny Smith apple, grated
1 medium onion (150g), chopped finely
500g sausage mince
500g pork mince
2 cloves garlic, crushed
2 tbsp salt reduced BBQ sauce
¼ cup salt-reduced tomato sauce
6 sheets puff pastry, thawed
1 egg lightly beaten

Pork and Apple Sausage Rolls Recipe
- Preheat oven to 220°C /200°C fan forced. Grease and line a baking tray with baking paper.
- Grate carrot and zucchini and remove any excess liquid with a paper towel.
- Place the grated carrot, zucchini and apple into a bowl. Add the chopped onion, sausage mince, pork mince, garlic, BBQ sauce and tomato sauce to the bowl; mix together until well combined.
- Cut pastry sheets in half lengthways. Spoon or pipe mince mixture lengthways along centre of each pastry piece; roll pastry over to enclose filling. Cut each roll into six pieces; place rolls, seam-side down, on trays. Brush with egg; cut slits into tops of rolls. Bake about 25 minutes or until golden.
- To freeze, place uncooked rolls in resealable food storage bags, then freeze for up to 3 months. You can cook them from frozen. Just increase cooking time to about 35 minutes.
TIP: For extra flavour, sprinkle a pinch of fennel seeds or fresh thyme over the sausage rolls before baking. These herbs pair beautifully with pork and apple, adding a subtle, aromatic touch to each bite.
