1 zucchini
1 carrot, peeled
1 egg
2 tbsp plain flour
½ tsp garlic paste
½ tsp fresh dill
100g haloumi, grated
1 tbsp vegetable oil

Carrot and Zucchini Fritters Recipe
- Grate or use a food processor to shred the zucchini and carrot; stand for 10 minutes and remove excess moisture. Place into a large bowl.
- Add egg, flour, garlic, dill and haloumi to zucchini mixture, mix until combined.
- In a large frying pan over medium high heat, add oil. Scoop tablespoon full amounts of mixture onto pan and cook for 3 minutes or until browned. Flip fritters and cook for a further 3 minutes or until cooked through.
- Serve warm with Greek yoghurt if desired.
