300g penne pasta (or any pasta)
2 tbsp butter
1 onion (150g), sliced thinly
1 tsp garlic paste
300g chicken breast, chopped finely
1 3/4 cups (700g) pumpkin puree (canned or fresh, steamed until soft)
½ cup (125mL) thickened cream
2 cups (160g) broccoli florets
½ cup (40g) freshly grated parmesan or tasty cheese

- Cook pasta in a large pot of boiling water, according to packet direction, drain; keep warm and reserve for later.
- Meanwhile, heat a large frying pan over medium heat and add butter, onion and garlic. Cook for 5 minutes or until golden. Add chicken and cook for a further 5 minutes, add pumpkin and cream, stirring until sauce has combined. Add broccoli and cheese. Mix well and cook until chicken has cooked through, and broccoli is tender.
- Gently stir reserved pasta through the sauce and serve with extra parmesan cheese if desired.
TIP: For extra creaminess, reserve a small amount of pasta cooking water and stir it into the sauce before adding the pasta. This will help the sauce cling to the pasta, making each bite more flavourful.
