2 tbsp olive oil
½ red onion, chopped finely
2 cloves garlic, crushed
¼ tsp ground cumin, optional
300g piece butternut pumpkin, cubed
3 cups salt reduced vegetable stock
½ cup (100g) red lentils
2 scoops NAN Toddler Milk Drink powder (optional)

Pumpkin and Lentil Soup Recipe
- In a medium saucepan, heat oil, sauté onion, garlic and cumin over low heat, until the onion becomes translucent.
- Add the pumpkin and fry for 2 minutes.
- Add stock; bring to the boil and simmer for 15 minutes, stirring occasionally.
- Add the lentils and simmer for a further 15 minutes, stirring occasionally. Using a stick blender, blend until smooth. Serve with toast fingers.

- Portion out one serving of the prepared dish.

- Store the remaining dish for up to 2 days, in the fridge for later use, and repeat, as above, if desired.
