
Breakfast Tortilla

Ingredients
1 egg
1/2 teaspoon of oil or butter
2 tbsp cheddar cheese shredded
1 mini tortilla
¼ avocado, sliced thinly

Breakfast Tortilla Recipe
- Pre-heat a medium non-stick pan over medium-low heat. Spray or grease with oil or butter.
- In a small bowl, whisk the egg; spoon the egg mixture into the pan and cook for 2 minutes.
- Sprinkle cheese on top, place the tortilla over the egg and cook for 2 more minutes.
- Using a spatula, flip the egg tortilla to cook for a further 2 minutes or until the tortilla is toasted. Carefully slide the tortilla onto a cutting board. Add avocado, cut into wedges, and serve.
Consume immediately, not suitable for leftovers.
TIP: Use the remaining avocado for a fresh avo dip to add to your afternoon tea or as an accompaniment to dinner. Simply mash your avo and mix with a tablespoon of greek yoghurt and one tablespoon of lime juice. Season with garlic powder.
