
Carrot Cake Cookies
Two of everyone’s favourite baked goodies in one, our Carrot Cake Cookies recipe takes the best things from a traditional carrot cake and puts it into a cookie! Filled with yummy oats, spices and carrot, these carrot cookies are the perfect breaky or afternoon snack for your little one. Prepped and baked in half an hour, these Carrot Cake Cookies are a time-saver and can be a delicious everyday snack all in one.
Ingredients
¾ cup (65g) Uncle Toby’s Quick Oats
½ cup (80g) wholemeal plain flour
2 scoops NAN Toddler Milk Drink powder
1 tsp baking powder
1 tsp ground cinnamon
2 tbsp unsalted butter, melted and cooled slightly
¼ cup (60mL) water
1 large egg, room temperature, beaten lightly
1 tsp alcohol-free vanilla extract
2 tbsp pure maple syrup
¾ cup (75g) grated carrots

Carrot Cake Cookie Recipe
- In a medium bowl, combine quick oats, flour, NAN Toddler Milk Drink powder, baking powder and cinnamon. In a separate bowl, whisk together melted butter, water, egg, vanilla, and maple syrup. Add wet mixture into the dry mixture, stirring just until incorporated. Fold in grated carrots.
- Preheat the oven to 160°C, grease and line a baking tray. Drop the cookie dough into 18 rounded scoops on the baking tray, flatten slightly (tip - the cookies don't spread very much!) Bake for 12-15 minutes. Cool on the baking tray for 15 minutes before turning out onto a wire rack to cool completely.
TIP: If any of the cookies turn out a little too crunchy for your little one, you can serve them with some warm NAN Toddler Milk Drink to dip their cookie in.

Can carrot puree be used as a substitute for grated carrots?
Yes! For a softer biscuit, you can puree cooled, cooked carrots or use premade carrot puree from the jar.
Can toddlers eat the cinnamon in Carrot Cake Cookies?
They certainly can! Once your baby turns 1 year of age, they can enjoy more diverse foods, herbs and spices such as cinnamon. Just be sure that you don’t overdo the cinnamon amounts, and that it’s mixed into the batter well.

Store your cookies in an airtight container in the fridge. You can also store your Carrot Cake Cookies in the freezer, just make sure they’re stored in an airtight container or bag and write the date on it.
