Ingredients
3/4 cup (120g) wholemeal flour
1/4 cup (25g) traditional rolled oats
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp ground cinnamon
1 small (100g) granny smith apple, grated
1 small carrot (70g), grated
1/3 cup (80g) greek yoghurt
60mL prepared NAN Toddler Milk Drink or full fat cow’s milk
1 egg, beaten lightly
1 tsp maple syrup
1/2 tsp alcohol-free vanilla essence

Carrot and Apple Muffins Recipe
- Preheat oven to 190°C/170°C fan forced. Grease a 24-hole (1 tablespoon/20mL) mini muffin pan.
- In a large bowl mix together the wholemeal flour, rolled oats, baking powder, baking soda and cinnamon. Stir though grated apple and carrot.
- In a large jug, combine Greek yoghurt, NAN Toddler Milk Drink, egg, maple syrup and vanilla and mix. Add the wet ingredients to the dry ingredients and mix until just combined, do not over-mix the batter.
- Divide the mixture between the muffins cases and then bake in the oven for 16-18 minutes until a skewer inserted in the middle comes out clean.
- Allow to cool slightly in the tray before turning the muffins out onto a wire rack to cool completely.
TIP - extra muffins are suitable to freeze for later use.
