Ingredients

1 cup (80g) desiccated coconut

2 tbsp caster sugar

1 large egg white, room temperature

1 tsp alcohol-free vanilla extract

2 tbsp water, room temperature

Step by step

  • Coconut Macaroons Recipe

    1. Preheat the oven to 160°C, grease and line a baking tray.
    2. Combine desiccated coconut, sugar, egg white, vanilla and water in a large bowl; roll heaped teaspoons of mixture into balls, place on prepared trays, 4 cm apart. Bake for 13-15 mins or until just golden.
    3. Cool on the baking tray for 15 minutes before turning out onto a wire rack to cool completely.
