Ingredients
400g can chickpeas, rinsed and drained
1/3 cup (95g) smooth almond butter or cashew butter, unsalted
2 tbsp maple syrup
1 tsp alcohol-free vanilla essence
2 scoops NAN Toddler Milk Drink powder
½ tsp bi-carb soda
½ tsp baking powder
½ cup (140g) dark chocolate chips or sultanas

Chickpea and Choc Chip Recipe
- Preheat oven to 180°C, grease and line a baking tray.
- Using a blender or food processor, blend or process chickpeas and nut butter on high for 1 minute or until smooth. Add maple syrup and vanilla and continue to blend until the mixture is free of any lumps.
- Add NAN Toddler Milk Drink powder, bi-carb soda and baking powder, blend until just combined. Stir in choc chips. Drop rounded teaspoons of mixture onto the prepared baking tray. The cookies will spread just slightly, so be sure you leave a few inches of space between cookies.
- Bake for 12-14 minutes until the cookies have browned on the edges. Cool on the baking tray for 10 minutes before turning out onto a wire rack to cool completely.
Tip – dough mixture is quite sticky. You can also substitute chocolate chips with sultanas.
