
Banana and Pineapple Smash Cake
Celebrate the first year in your little one’s life with this delicious and fruity smash cake recipe! Not only is this Banana and Pineapple cake filled with delicious flavours, it’s also got some great textures for them to get their little hands into. Sweet but not too sweet, this tropical fruit cake is a hit for little mouths (and fingers!).
Ingredients
2 cups (300g) self-raising flour
½ tsp bicarbonate of soda
1 tsp mixed spice
½ cup (110g) brown sugar, firmly packed
2 bananas, mashed
1 tsp alcohol-free vanilla extract
1 serve (230mL) prepared NAN Toddler Milk Drink or full cream cow's milk
440g can of crushed pineapple in natural juices
Icing
250g cream cheese, softened
¼ cup caster sugar
300mL thickened cream
1 tsp alcohol-free vanilla extract

Banana and Pineapple Smash Cake Recipe
- Preheat oven to 180°C/160°C fan-forced. Grease and line 2 x 8 inch round cake pans with baking paper.
- Sift flour, bicarbonate of soda and mixed spice into a bowl. Add sugar. Using a large metal spoon, stir to combine. Stir in banana, vanilla, prepared NAN Toddler Milk Drink and
- Pour batter into prepared pans. Bake for 35 minutes or until a skewer inserted in center comes out clean. Cool in pan for 5 minutes. Turn onto a wire rack to cool completely.
- To make icing using an electric mixer, beat cream cheese and sugar until smooth; add vanilla and thickened cream, beat until light and fluffy. Add the mixture into a piping bag fitted with a large round nozzle.
- Place 1 layer of cake on a cake stand. Pipe over one-quarter of the frosting mixture. Place the remaining cake on top. Lightly smooth the remaining frosting mixture over the top and sides of the cake. Serve.
